Santa Fe French Toast

Incredients
3 slices of bread, 3/4-in thick
1/4 teaspoon salt
4 eggs, slightly beaten
cooking oil
1 cup half and half
confectioners' sugar

Directions
Use firm homemade-type of bread. Trim crusts and cut diagonally into triangles. Combine eggs, half and half, and salt. Dip bread in mixture allowing pieces to absorb as much liquid as possible. Fry in about one-half inch cooking oil heated to 325 degrees.
When brown on one side, turn and brown second side. Place on baking sheet and allow to puff in 400 degree oven for 3 to 5 minutes. Drain on paper towels to absorb excess fat. Sprinkle with confectioners' sugar and serve immediately with applesauce, jelly, honey, or syrup.
